Chicken Tortilla Soup

I love Chicken Tortilla Soup. It is filling and spicy with a bit of crunch from the toasted corn tortillas. Please excuse the quality of the pictures as they were taken with my cell phone.

PotPies

I have a weakness for comfort food so when I cook it is almost always comfort food. Andrew had some chicken he was going to just cook up and serve with rice when I suggested potpies. Now when we make potpies it is rather simple. The filling is just plain chicken cooked in a iron skillet (iron skillets are featured heavily in our cooking), mixed veg from Sam's Club, potatoes cut into tiny cubes and boiled until soft, and a garlic cream sauce to bind it all together. The filling goes into a 8 inch pie pan lined with No-Fail pie crust (a recipe that has been in my mother's family for generations), covered with the same and baked in a 350 degree oven until golden.

I like food. Correction, I love food. What makes it even better is that I love to cook too. And I am a pretty good cook. I have been cooking since I was 8 years old and I am now in my early 20s. I also enjoy baking but I do not excel in this like I do with cooking. On this blog I will be posting pictures of the food that we cook along with directions if people are interested in that. I must warn you that none of the food we cook is super healthy or low fat. I personally cook southern style and that means goodness and slightly artery clogging. I do like to cook with organics though and fruits and veg. Our family is not vegan so meat will be featured very strongly. Please keep in mind that there are 10 people living in our home and so the amounts made will seem huge.
